Interview with Stephanie Middleberg MS RD

SNI: What is the single most important piece of dietary advice that you would give to EVERYONE?

Stephanie: I encourage all my clients to make the switch from artificial sweeteners to real unprocessed forms like raw honey, maple syrup, sugar in the raw, date sugar, etc. Clients are often very surprised when I tell them to eat real sugar over the other stuff. I see a lot of digestive issues and sugar ?addiction? in my office and I find that these sweeteners not only lead to an upset stomach but also contribute to increased cravings, slow metabolism and weight gain.

SNI: What dietary needs or concerns seem to beset women more so than men? Why?

Stephanie: Men have it easy! Kidding. But seriously, woman have to fight harder to reduce body fat, mood and hormonal swings. They also have to worry more about Osteoporosis, fertility, digestive issues, heart disease and changes in body fat distribution. At different life stages, there are separate concerns.

SNI: Describe Stephanie Middleberg?s ?Perfect Meal.? We want to know what you eat:)

Stephanie: My perfect meal. Depends on the meal;) I really do love food and expect clients to enjoy as well.

For breakfast: It would be Eggs Florentine 2 poached eggs over spinach and English muffin + fruit (I always have fruit with breakfast) OR a smoothie with almond milk, frozen banana, 1/2 cup mango, ground flax, wheat germ, cinnamon and honey OR oatmeal with smashed banana and almond butter and maple syrup. Can?t decide between them.

Snack: anything with peanut or almond butter. Actually, lately I am loving sunflower seed butter. I love banana and almond butter with sprinkled coconut flakes.

Dinner: Whole branzino with grilled asparagus, roasted fennel and potatoes

Dessert: can?t go a day with out chocolate. I like dark over 70% bittersweet.

SNI: List your top 5 supplements for overall health.

Stephanie: Fish oil, probiotics, Vitamin D, B12, magnesium

SNI: How exactly does one know their ?Food Personality??

Stephanie: That?s a good question. I think as we get older we have a better sense of our not so great habits and behaivors we just know aren?t the healthiest. Some questions I ask clients to help determine their Food Personality include: Do you finish your plate when out? Do you have problems stopping when your full? Can you eat the same thing every day or do you get bored? Are you a great eater all day and attack the fridge once you get home? Do you get cranky and CRAVE sweets around 4ish? Do you feel hunger? All of these questions can help guide the plan I develop for my client but clearly eating is not just about food. We all have other attachements we need to work through. It is important for my clients to be honest with themselves before they make changes.

SNI: Sorry one more?bonus question: If you could be a Marvel Comics Superhero, who would it be?

Stephanie: I just want to fly. Do they all do that???

Education

Stephanie got her Masters in clinical science and her RD at New York University. She received her undergraduate degree from the University of Wisconsin, where she graduated with distinction.
